Healthy & chocolate pudding does not normally feature in the same sentence, but this pudding is indeed good for you. Now those of you who are afraid of eating fat wont be too happy, because it’s definitely not fat free… But that is partly why it’s so good for you, it’s full of good fat! So forget about those ready made empty calorie sugar loaded chocolate puddings you buy in the supermarkets, this pudding with avocado, banana and coconut milk is quick to make, delicious and packed full of nutrients. And you wont believe there is avocado in it! Even my husband has given this the thumbs up.
Chocolate Avocado Pudding (serves 2- 3)
2 Tablespoons coconut milk
2 Tablespoons (or to taste) honey/ sweet freedom/
sweetener like fructose or Xylitol
1 Tablespoon good quality unsweetened coco powder
1/4 teaspoon vanilla extract
1/4 teaspoon cinnamon
Add all the ingredients in a tall blender cup and blend until smooth.
At this point it’s time to have a taste and see if you need more coco
powder, or sweetener to mask the avocado, once the taste is all good
use an electric whist to whisk the mixture until silky smooth and
creamy. Serve with a sprig of mint or a dusting of coco powder.
