Grain-free, gluten-free, low carb, matcha pancakes

I’m on a bit of a green food roll at the moment. Only a couple of weeks ago I wrote about Green omelettes, and now here I am with green pancakes. But the green in the omelette is from chard, whereas the green in these pancakes comes from matcha powder. For those of you who don’t know, matcha is finely milled Green tea. The great thing about ,atcha is that it has a much greater concentration of the anti-oxidant EGCG that Green Tea is so famous for. And matcha delivers a potent concentration of chlorophyll and catechins. *
I love a steaming cup of milky Matcha cappucino made with coconut milk, but I also really love these pancakes, especially as they contain no flour whatsoever. I wouldn’t have these daily, as they do contain cream cheese and I try to avoid dairy whenever possible, but still much easier to digest and lower in carbohydrates than flour pancakes. Plus they are super quick and easy to make, and if you don’t want the temptation of topping them with honey or syrup, make the apple cinnamon topping as below or serve your pancakes with some fresh berries. The only warning I will give is that they can be tricky to flip over, so try to keep them small.

For the pancakes
- 2 oz / 60 g cream cheese
- 2 eggs
- 1 tsp honey/sweet freedom (optional)
- 1/2 tsp Matcha powder
- 1/2 teaspoon cinnamon
- cocnut oil/ghee for the pan
- 1 apple
- handful of raisins/sultanas
- 1 tsp coconut oil/ghee
- 1/2 tsp cinnamon
- pinch of freshly ground nutmeg
